Recipe: Paneer Tikka Kati Roll by Masterchef India Winner

Well now you can crave no more and get cooking our own with this fantastic recipe we have brought for Paneer Tikka.

Today's recipe for Kati Roll comes from the UAE raised winner of Masterchef India 2015, Nikita Gandhi.

Nikita runs her Instagram page with the handle name @veggiefix and keeps uploads scrumptious food photos, with detailed recipes on her feed. All vegetarians and non-vegetarians wanting to try vegetarian dishes, must head over to her page and see the kind of magic she creates with everything vegetarian. 

Now you can cook Paneer Kati Roll following Masterchef India Winner, Nikita Gandhi's recipe: 

For the marinade

Ingredients

1/2 cup:  Yoghurt 

2 tablespoons: Gram flour

1 tablespoon: Smoking hot mustard

1 teaspoon: Cumin powder

1 teaspoon: Turmeric powder

1 teaspoon: Chaat masala

1/4 teaspoon: Black salt

1/4 teaspoon: Black pepper

1/4 teaspoon: Dried fenugreek

1/4 teaspoon: Carom seeds

Procedure

Mix everything together. Add in a handful each of cubed capsicum, onion, tomato and paneer. Mix well and refrigerate for 2 to 3 hours. Cook well until the masala is browned. 

For pickled onions

Ingredients: 

1 onion thinly sliced

1/4 teaspoon of vinegar

A pinch of salt, sugar, red chilli, dry mint. 

Procedure

Toss and refrigerate for 1 to 2 hours to remove the rawness of onions. 

For whole wheat rumali roti 

Ingredients 

2 cups: Wheat Flour

A pinch of salt

Paneer Whey to knead the dough (use 50% white flour if using regular water)

Procedure

Make a soft dough using water leftover after making paneer. Divide into portions and roll out thinly with a dusting of flour. Cook on a hot pan on both sides, pressing gently with a folded napkin till light spots appear. Keep the rotis covered in a tea towel. 

For mint chutney

Ingredients 

1/2 cup: Mint

1/4 cup: Coriander 

1: Clove garlic 

1: Green Chilli 

2 tablespoon: Yoghurt

2 to 3: Ice cubes

Salt and lemon to taste

Blend everything together till smooth. 

Combine

Roll out the cooked whole wheat rumali roti, spread mint chutney on top of it and stuff it with masala.
