Snacking… don’t we all love snacking? This is one of the questions most clients ask me about. They need inspiration for healthy but easy to prep snack options. So I’ll share some of my favourites, my go-to snacks that you can usually find already prepared in my fridge or freezer. These snacks are my favourite because they are high in protein and or a good source of complex carbohydrates, fibre and fairly low in sugars. They are great if you fancy a little something in the afternoon or want something healthy to take with you to the office. Ingredients
1 medium sweet potato, grated
1 free range egg
Fresh or frozen herbs
1 tbsp grated Gouda cheese
Toppings:
Fresh tomatoes, cold cuts like turkey or chicken breast, Quark, fresh herbs.
Directions
Heat a waffle iron (if you do not have a waffle iron, you can pan fry them just like you would with pancakes). In a large bowl, mix grated sweet potato, egg, cheese and herbs and add a pinch of salt and pepper. Depending on the size of your waffle iron, use 1 large tbsp for each waffle. Close waffle iron and allow to cook until golden brown. Repeat until you have finished all your mixture, this should give you 3 to 4 waffles. Place waffle on plate and add your favourite toppings. The great things with this kind of waffle is that you can cook them in advance and put them into a freezer bag. When you feel like eating one, take one out and simply throw them into your toaster and heat/ toast until crunchy. Add toppings and you have a healthy but tasty treat. Also, you can easily replace the sweet potato with grated zucchini if you are looking for a lower carb version. Leave the cheese and add desiccated coconut instead for a sweet version.
