Chef Jonathan commenced his journey as a sous chef at Flamingo Room by tashas in 2020, eventually transitioning into the role of brand chef at tashas. Reflecting on his culinary journey, Chef Jonathan, who started as a commis at Cube Tasting Kitchen, a renowned degustation restaurant in South Africa, reminisces about his inspiration drawn from his grandparents’ kitchen. There, he was surrounded by the savoury aromas of his grandfather’s cooking, followed by the sweet delights and pastries that his grandmother meticulously prepared throughout the day. 1. How did you get started in the food industry? My first experience in the culinary industry was at age 16. During that time, I was employed part-time over the weekends and school holidays. Some of these positions involved serving customers and preparing food at food stands located in a flea market, as well as undertaking dishwashing responsibilities in restaurants. Fortunately, my dishwashing role was brief, and I soon progressed into prep and basic cooking duties. The chaos and nature became almost addictive and I decided to pursue a tertiary education in the culinary arts. 2. What is your earliest cooking memory? My earliest memory is of helping my grandfather make cottage pie. I would incorporate egg yolks into warm mashed potatoes with a wooden spoon and sneak a handful of the mixture from the pot for a quick taste when he wasn’t paying attention. 3. What is your favourite dish from your country? My favourite South African dish is Potjiekos, which translates to ‘small-pot food’. Despite its name, it’s cooked in a large cast iron pot. Prepared over an open flame, this dish starts with large cuts of meat like oxtail and beef neck, alongside an assortment of vegetables. Proper layering of vegetables is essential, with thicker ones added first, followed by delicate ones at intervals to prevent overcooking. Then, stock is poured over the ingredients, and the pot is covered with a heavy lid. To maintain consistent heat, coals are gradually added to the base of the pot. 4. What is the one go-to and easy snack you love making for midnight cravings? A sandwich! Whether it’s a classic toasted cheese and black pepper sandwich or an open-faced creation featuring tomato, cream cheese, and whatever cold cuts happen to be in my fridge at the moment. 5. What is the one raw ingredient you cannot cook without from your country? It would undoubtedly be rooibos. It’s primarily used as a tea, characterised by its naturally sweet flavour and captivating aroma. Apart from tea, it has many other uses in the culinary world. It can be used for smoking meats and vegetables, adding depth of flavour to sauces, and even incorporated into creams for desserts. In tashas Battersea in London, we use rooibos to craft a stunning red-tinted teriyaki sauce that perfectly complements our salmon dish. 6. What is the best dish to try at your restaurant? If I had to single out just one dish, it would do a disservice to the diverse offerings across all our restaurants. However, I’d be more than happy to share some of my personal favourites as well as our most sought-after dishes. For meat enthusiasts, our Portuguese steak is an absolute must-try. The combination of our signature sauce, succulent tenderloin, and perfectly crispy homemade lays has made it a firm favourite among our patrons. Our prawn pasta is another dish that tantalises the taste buds with a subtle hint of spice, served with stracciatella, and a zesty lemon and herb crumb. For those looking for vegetarian options, our iconic Texas salad has gained widespread recognition and replicated across Dubai. Additionally, our chopped kale and halloumi salad offers a refreshing and nutritious alternative.

In today’s interconnected world, it plays a pivotal role in their lives. It stems from various sources like friendship groups, classmates, or siblings, shaping their sense of belonging. As a parent, helping children navigate these emotions is crucial. In this article, Connector, with various experts, suggests simple ways to support your child in handling peer pressure effectively. Help Your Kids Understand The Importance Of Saying No While saying ‘no’ might seem impolite, it’s essential for everyone, including children, to learn its significance. Parents play a crucial role in teaching kids to assertively say ‘no’ when needed. Children should learn that it’s acceptable to decline and not always conform to please others. instil a sense of security in your child and empower them to embrace their uniqueness. Foster self-confidence by teaching them that it’s okay to be different and that everyone has their strengths. “The best way to empower your child is to celebrate them as they are now. Encourage their hobbies and interests, and recognise and praise their achievements and efforts. Another way to build their confidence and independence is to involve them in family decisions, helping them understand that their opinion matters and that they are an integral part of the family,” suggests Eloise Briey, Senior Marketing Executive, Swiss International School. Educate Your Children About Peer Pressure Often, children may not realise they’re behaving differently due to peer pressure. As a parent, it’s crucial to educate them Sharing her take on this Joanna Brandariz, Key Stage 3 Progress Leader and Teacher of Dance and PE, Horizon International School, says, “Parents can empower children by roleplaying assertive responses to peer pressure, encouraging confident refusals and proposing alternative activities. Help them understand that saying ‘no’ may lead to short-term discomfort but can prevent long-term regret and support their values and boundaries.” Adding to this Nicola Hamer, Appointed Head of Secondary Academic Year 202425, The English College Dubai says, “One strategy parents could try is to role-play different scenarios with your child. This helps them practise saying ‘no’ confidently in a safe environment. It also helps to engage in open conversations at home about peer pressure and remind your child that it’s okay to make their own choices, even if it’s not what everyone else is doing.” Boost Your Child’s Confidence: Remind Them They’re Perfect as They Are Peer pressure often emerges when children compare themselves to others and feel judged based on their appearance, performance in sports or academics, and more. While you can’t control other children’s behaviour, as a parent, you can

Teach kids to recognise peer pressure and how to respond effectively in such situations. Nicola Hamer, Appointed Head of Secondary Academic Year 202425, The English College Dubai, adds, “It’s good to help your child understand that peer pressure often occurs because people want to fit in, be liked by their friends, or avoid being teased or excluded. Teach them the importance of listening to their feelings and values, and remind them that it’s okay to say ‘no’ if something doesn’t feel right.” “You can teach your children to recognise various forms of peer pressure, from subtle persuasion to coercion. Encourage them to stand up for themselves if it aligns with their moral beliefs,” suggests Joanna Brandariz, Key Stage 3 Progress Leader and Teacher of Dance and PE, Horizon International School. Pay Attention To Your Child’s Mood To support your children in handling peer pressure, it’s crucial to monitor their mood and engage in daily conversations about school and life. “Sudden behavioural shifts such as withdrawal or mood swings may signal negative peer influence. Consistent, honest dialogues enable you to remain connected to your child’s emotional health, promoting confidence and self-esteem,” explains Joanna Brandariz, Key Stage 3 Progress Leader and Teacher of Dance and PE at Horizon International School. Shedding light on this and suggesting some signs to look out for, Eloise Briey, Senior Marketing Executive, Swiss International School adds, “Signs to look out for include sudden changes in behaviour or attitude, a sudden loss of interest in hobbies, passions, or studies, and increased secrecy about their daily activities. However, these can also be symptoms of other issues, so the best way to know for certain is to have conversations with your child or their teacher.” Instil Open Communication The most effective approach to assist your child in managing peer pressure is by fostering open communication. Focus on building a strong connection with your child. “It’s vital to create a safe and open environment. Regularly ask about their day and listen without interrupting, showing that you care about their thoughts and feelings. Be patient and calm, even when they tell you something difficult, so they know they can trust you. Share some of your experiences to show that it’s okay to talk about different things. Praise their honesty and let them know they can always come to you without fear of getting into trouble. It will help build trust and make them feel more comfortable opening up to you,” suggests Nicola Hamer, Appointed Head of Secondary Academic Year 202425, The English College Dubai. Adding more to this, Eloise Briey, Senior Marketing Executive, Swiss International School suggests, “Another essential element of open communication is creating a judgment-free zone: your child needs to feel that when they share, they will be met with kindness and compassion, not judgement.” Teach Your Child The Difference Between Goo And Bad Friendships While in school or college, children naturally form friendships and have their social circles. It is their right to choose their friends, however, they may struggle to distinguish between positive and negative influences among their peers. “As a parent, teaching your child how to choose friends, what to look out for, and how to maintain friendships is helpful. Being part of a strong, healthy group of friends can keep them safe from negative peer pressure,” suggests Eloise Briey, Senior Marketing Executive, Swiss International School. How Can Schools Help Deal With Peer Pressure Parents play a crucial role in assisting their children with peer pressure, but schools also have a significant responsibility in this regard. Nicola Hamer, Appointed Head of Secondary Academic Year 2024-25, The English College Dubai, adds, “Offering counselling services where students can discuss their concerns and receive support and guidance is a good way to help kids. Besides this, fostering a positive and inclusive environment where differences are celebrated, and bullying is not tolerated also helps with peer pressure. Meanwhile, Joanna Brandariz, Key Stage 3 Progress Leader and Teacher of Dance and PE, Horizon International School, says, “Schools are also vital in addressing peer pressure through programs on socialemotional learning and conflict resolution. It is vital to also ensure that students have avenues to seek support from trusted adults. By equipping children with effective peer pressure navigation skills and fostering collaboration between parents and schools, teachers empower kids to make confident choices.”

CONNECTOR.AE 34 CONNECTOR.AE 35 Health and Wellness Health and Wellness Fat Loss Vs Weight Loss: What Is The Difference A healthy body and mind are crucial for longevity and disease prevention. When aiming for a healthier lifestyle, many people concentrate on losing weight rather than focusing on fat loss. While weight loss and fat loss may sound similar, they are distinct processes. Weight loss often involves shedding water weight and muscle mass along with fat. In contrast, fat loss targets the reduction of fat stored in the body, leading to more effective and beneficial outcomes. If you’re unsure about the differences between weight loss and fat loss, let Connector guide you through understanding these differences. What Is Weight Loss Weight loss refers to a reduction in overall body weight, which can occur due to various factors such as loss of water, muscle, or fat. While losing excess weight can have health benefits, it’s important to understand that not all weight loss is the same. Many individuals monitor their weight loss progress by stepping on a scale, but this only reveals the total weight lost, not specifically the amount of fat lost. Adding to this Dr Maher Al Ahdab, Plastic and Reconstructive Surgent, Medart Clinics, says, “Weight loss can lead to a decrease in muscle mass, resulting in a softer appearance and potentially lower metabolic rate. While weight loss can improve health, indiscriminate loss of muscle and water can be dangerous.” What Is Fat Loss Fat loss targets reducing the percentage of body fat. Excess body fat can lead to health issues like obesity. Fat loss focuses on decreasing fatty tissue while preserving lean muscle mass. Compared to losing water or muscle, losing fat is more advantageous for health. Commenting on this striking difference Dr Azra Kasalo, Specialist Internal Medicine, Dubai London Clinic And Speciality Hospital, adds, “Weight loss is simply an overall reduction in body weight (including muscle, water, and fat loss), while fat loss specifically targets reducing body fat (both subcutaneous and visceral fat) and focuses on preserving muscle. The medical definition of weight loss is a decrease in body weight resulting from either voluntary (diet, exercise) or involuntary (illness) circumstances.” Dr Maher Al Ahdab from Medart Clinics, adds, “The primary difference between fat loss and weight loss lies in what is being reduced from the body. Fat loss specifically targets the reduction of body fat, achieved through methods like balanced nutrition and resistance training to preserve or increase muscle mass. Weight loss, on the other hand, refers to a general decrease in overall body weight, which includes the loss of fat,

CONNECTOR.AE 36 CONNECTOR.AE 37 Health and Wellness Health and Wellness Exercise And Weight Loss, How To Find The Balance Dr. Maher Al Ahdab from Medart Clinics says, “Your focus should be on increasing muscle mass through proper diet and resistance training. It results in a leaner, more defined physique and improved health outcomes by reducing the risk of diseases associated with high body fat. Hence, it’s vital to work out at least 30 minutes a day.” To establish a sustainable workout routine, consider activities you enjoy, like dance or sports, and aim to engage in them at least three times a week. Incorporate strength and resistance training exercises such as squats, deadlifts, bench presses, and overhead presses to target multiple muscle groups, promoting muscle growth and fat loss. You can also include high-intensity interval training (HIIT) for short bursts of intense exercise followed by rest periods to burn calories and improve cardiovascular health. Moderate cardio activities like brisk walking or cycling also aid in fat-burning without sacrificing muscle mass. Aim for 150 to 300 minutes per week of cardio and musclestrengthening activities for a healthy life. Conclusion Overall, it’s important to accurately track your progress. Make sure you understand what you are losing, set clear goals, and follow a sustainable routine for better bone health and a long life. What Should You Focus On More When losing weight, some people also lose muscle and fluid along with fat, which can have negative health effects. Your goal determines whether to focus on weight loss or fat loss. If you want quick results for an event, weight loss may be sufficient. But for long-term health, stamina, and overall wellbeing, prioritise fat loss. Though it can be challenging and slow, fat loss offers more lasting benefits. Dr Azra Kasalo at Dubai London Clinic And Speciality Hospital, says that balance is the key to everything, especially for your muscle mass, and adds, “Sarcopenia or muscle loss can be detrimental, as muscle is a crucial component of your overall health. Unfortunately, it is underestimated and underdiagnosed. It is more common in ‘weight cycling’- repeatedly losing and gaining weight multiple times through life since weight regain is almost entirely fat, and therefore it leads to sarcopenic obesity. Several studies have linked a higher fat-to-muscle ratio to chronic diseases, i.e., heart disease and diabetes. To prevent sarcopenia, we need to follow a healthy diet, increase protein intake, and engage in strength or resistance training.” Meanwhile, Dr Maher Al Ahdab from Medart Clinics says that focusing on fat loss is generally more beneficial for achieving a healthier body composition and sustaining long-term health. muscle, and water. This can lead to a softer appearance and potential muscle loss, which may lower the metabolic rate.” How Can You Understand Whether You Are Losing Weight Or Fat Don’t rely solely on the scale for progress. Water and muscle weight loss can affect your weight. Track changes in body measurements like waist and hips. If strength and performance in activities improve despite weight loss, you’re likely focusing on fat loss over muscle loss. Dr Azra Kasalo at Dubai London Clinic And Speciality Hospital, suggests, “Using a body fat scale can provide a more accurate picture of your body composition by measuring the percentage of fat and muscle you have. You can alsouse skinfold callipers to estimate your body fat percentage, but this takes practice to ensure accuracy. A simple, non-invasive, and inexpensive fat mass observation is the waist circumference to height ratio. Studies showed that it was more accurate than the body mass index (BMI) in predicting excess body fat. According to research, a healthy waist-to-height ratio ranges between 0.4 and 0.49.” Food And Weight, How To Find The Balance • Aim for a healthy and fit body overall, capable of enduring physical activities and daily tasks. • Maintain a balanced diet rich in protein, complex carbohydrates, healthy fats, and fibre. • Include protein-rich foods such as lean meats, poultry, fish, eggs, dairy, legumes, and plant-based proteins. • Incorporate healthy fats from sources like avocados, almonds, seeds, and olive oil, essential for hormone synthesis and overall wellness. • Opt for complex carbohydrates found in vegetables and fruits to sustain energy levels and support physical workouts. Adding her input on this Dr Azra Kasalo at Dubai London Clinic And Speciality Hospital, says, “There is plenty of food proven to support fat burning when eaten as part of a controlled eating plan, i.e., salmon, nuts, berries, watermelon, cinnamon, chilli, coffee, green tea, and apple cider vinegar. As a controlled eating plan for long-term satisfaction, it is important to follow a diet we truly enjoy.”
