Recipe: A Favourite Indian Street Food, Vada Pav

Are you looking to try something new and tempting with your evening tea? Let's try a favourite food from the streets of India, Vada Pav. Fried potato ball stuffed in a bun with delicious chutneys is one of the most simple yet heavenly foods ever created.

We sourced this recipe from Harleen Kapoor, franchise owner of Tibbs Frankie in Jumeirah Lake Towers. It is one of the best selling items in her kitchen, and here is the unfiltered recipe for our readers. 

For 8 to 10 Vada Pavs

Ingredients For The Vada

  • 1 inch ginger
  • 5 to 6 large garlic
  • 2 green chillies
  • 1 tablespoon of oil
  • 1/4 teaspoon of mustard seeds
  • 1/4 teaspoon of hing known as asafoetida
  • 12 to 15 curry leaves
  • 6 medium potatoes
  • 1/2 teaspoon of turmeric
  • salt to taste
  • 2 tablespoon of chopped coriander

Process

  • Boil the potatoes, peel them and set them aside.
  • Using a mortar and pestle, crush the ginger, garlic and green chilli. Set it aside.
  • Heat 1 tablespoon of oil in a pan, add the mustard seeds and let them pop, then add curry leaves and hing.
  • Add the crushed garlic, ginger and green chilli. Cook for a minute till everything is cooked.
  • Now add the boiled potato and remove the pan from the heat.
  • Add turmeric and salt and mash the potatoes with a masher.
  • Add the chopped coriander.
  • Now make lemon sized balls and set aside

Ingredients For The Batter

  • 1 cup besan (chickpea flour)
  • 1/2 teaspoon of turmeric
  • 1/2 teaspoon of salt
  • Pinch of baking soda
  • 1/2 cup water

Process

  • To make the batter, take chickpea flour in a large bowl, add turmeric, salt and a pinch of baking soda.
  • Start adding water, little by little, to get a smooth consistency.
  • The batter should neither be thick or thin.

Frying The Vada

  • Heat the oil on medium flame.
  • Dip each potato ball in the batter and coat it from all sides.
  • Then drop carefully in the hot oil.
  • Fry the Vada in the hot oil until golden brown in colour
  • Drain on a paper towel.

Ingredients For Green Chutney

  • 1 bunch coriander
  • 1 to 2 green chillies
  • 2 garlic cloves
  • 1/4 teaspoon of cumin seeds
  • 1/4 teaspoon salt
  • The juice of 1 lime
  • 1/2 teaspoon of sugar (optional)

Process

Add all the ingredients mentioned above in a grinder jar and grind everything well. 

Ingredients For Tamarind Chutney

  • 1 cup water
  • 1/4 cup tamarind paste
  • 50 grammes of jaggery
  • 3 tablespoon sugar to taste
  • 1/2 teaspoon salt
  • 1/2 teaspoon red chilli powder
  • 1/2 v ginger powder

Process

Add all the ingredients mentioned above in a grinder jar and grind everything well. 

Assembling The Vada Pav

Butter for toasting the Pavs

Process

  • To assemble the Vada Pav, toast the Pav with some butter on the pan. Then slice the Pav not entirely, it should be still attached at one end.
  • Apply green chutney on one side and tamarind chutney on the other side.
  • Place fried Vada in the centre.
  • Serve the Vada Pav immediately, with more chutney at the side.
