There are always ways to prepare quick meals for your family and yourself in a healthier and lighter way so that you can have them guilt free. Fast food can be nutritious and tasty if prepared in a healthy way. Avoid lots of fat, go for lean meat and fresh ingredients, use only low fat cheeses (less than 17% fat). Bake the food and never fry it. Avoid mayonnaise. Use whole meal flour and bread. Here is a quick recipe for a healthy quick pizza.
Easy Ciabatta Pizza

Ingredients:
Pizza Sauce:
1 onion - chopped finely
2 garlic cloves - chopped finely
2 teaspoons olive oil
1 kg of fresh tomato - peeled and chopped or 1 and half x 415g cans crushed tomato
1 teaspoon oregano
1 teaspoon basil
half teaspoon thyme
dash of salt and black pepper
(optional: drizzle of hot sauce)
Toppings:
1 onion - cut in to rounds (lightly sautéed)
1 cup coloured and green peppers - cut in to strips
1 cup of fresh mushrooms, sliced
1 cup of light mozzarella cheese or light cheddar - shredded
1 teaspoon fresh or dry oregano
1 ciabatta loaf, sliced lengthways and halved
Directions:
1. Heat oven to 180C.
2. In a sauce pan, prepare the pizza sauce. Pan fry the ingredients in olive oil until soft. Then add the tomatoes.
3. Place the ciabatta halves, facing upwards, on a baking tray. Spread the pizza sauce over the bread, spreading a little to cover.
4. Spread the topping ingredients on the bread and sprinkle over the cheese, then bake for 10 minutes or until the cheese is bubbling.
5. Garnish with oregano and serve warm.
