UK Mother’s Day falls on Sunday 15th March this year, so why not take the time to surprise your mum with a tasty supper cooked by you? This Chilli Con Carne recipe is easy to follow, just make a grocery list from below to ensure you have all the ingredients, then lay the table, light the candles and don’t forget the flowers, card and of course a big thanks for Mum.
Serves 3-4
Ingredients
450 grams (1lb) good quality beef mince
1 white onion finely chopped
1 red pepper deseeded and finely chopped
1 green pepper deseeded and finely chopped
2 cloves garlic crushed
400 gram tin chopped tomatoes
400 gram tin red kidney beans (drained
and rinsed)
1 packet Chilli Con Carne mix (medium
or strong)
Olive oil
Salt and pepper to taste
Method
Brown the mince in a frying pan for 4-5 minutes and drain excess liquid off in a sieve. In a saucepan heat a little olive oil and sauté the chopped onions, peppers and crushed garlic (do not burn). Add the drained mince and chilli mix powder and stir to coat well, add salt and pepper to taste. Next add the chopped tomatoes and drained kidney beans and bring to the boil. Half cover the pan and simmer for about one hour, stirring occasionally to stop chilli from catching
the bottom of the pan. Taste and season.
This can also be cooked in a casserole dish in the oven for 2 hours on low heat.
Serve with boiled rice or baked potatoes and garlic bread, along with sides of sour cream, fresh chopped coriander, lime wedges and nachos.
Notes: you can replace the minced beef with diced beef. Also you
can add one teaspoon of cocoa powder to enhance the flavour. The sauce
can be cooked the day before and kept in the fridge and leftovers can be frozen.
