Ingredients:
180g boneless skinless chicken thighs
30g cornstarch
10g chopped ginger
10g chopped garlic
50ml vegetable oil
20g crushed peanuts
2g chilli flakes
For the sauce:
30g oyster sauce
10ml dark soy sauce
5g brown sugar
5ml white vinegar
10ml Shaoxing cooking wine
30g cornstarch
Recipe:
- In a bowl, mix the ingredients for the sauce together and set aside.
- Cut the chicken thighs into bite-sized pieces, around 6 to 8 pieces depending on the size of the thigh. Do not pat the chicken thighs dry, as moisture is needed.
- In a bowl, add the chicken pieces and then the cornstarch, coating each piece evenly.
- Set a wok or pan over medium-high heat, add vegetable oil and allow it to get hot. To test, put a wooden chopstick into the oil, and if there are bubbles, the oil is hot.
- Add the chicken to the oil and spread them apart. Once separated, do not move the pieces around, allowing the pieces to sear and form a golden crust, with five to six minutes on each side.
- Remove and transfer the fried chicken to a plate or cooling rack and pour out the excess oil from the pan.
- In the same wok over medium-high heat, add the ginger, garlic and pre-mixed sauce. Let it come to a boil to thicken and reduce.
- Toss the fried chicken in and mix until each piece is coated in sauce, and garnish with crushed peanuts.
