Breakfast is the most important meal of the day and what better way to start the day than with waffles.
The recipe for carrot waffles is a great one for a quick and healthy alternative and can also be had as a snack anytime during the day.
Made by Chef Nilesh Darekar, Chef de Cuisine at Eat and Meat Restaurant at The H Hotel, this delicious recipe will definitely be your go-to for tasty waffles.
Ingredients:
- 150g grated carrots
- 2 eggs
- 20g chives
- 25g flour
- 50g grated Gouda cheese
- 30g avocado
- 10g salt
- 5g pepper
- 5ml olive oil
- 15g Frisse lettuce
- 5g micro greens
- 15g cherry tomatoes
- 5ml lemon juice
Recipe:
- Preheat the waffle iron.
- In a large bowl, mix the carrots, beaten eggs, cheese, chives, flour, salt and pepper.
- Pour the mixture onto the waffle iron and cook till golden brown.
- Smash the avocado and add salt, pepper, olive oil and lemon juice to make the dip.
- Confit the cherry tomatoes in olive oil, salt and pepper on moderate heat.
- Make a salad with the lettuce and micro greens and use lemon juice, olive oil, salt and pepper to make the dressing.
