CONNECTOR.AE 3 Welcome October is marked the world over as Breast Cancer Awareness Month and is symbolised by the pink ribbon. The ribbon was originally created in 1991, by breast cancer survivor Charlotte Haley from California, USA, who began hand-making peach-coloured ribbons in her dining room, and is now worn by many people, from those undergoing treatment for breast cancer, as well as survivors, and supporters and families of people affected by breast cancer, to raise awareness. This issue Connector has spoken with Usha Shah, a UAE resident and mother of three who was diagnosed with breast cancer in September 2020, and though was told at the time it was late stage three of breast cancer, by October 2021 was told she was in remission. Read her story on pages 63 to 66. Early detection of breast cancer is important and plays a critical role in how it can be treated. Connector asked specialists in the UAE to share their valuable advice on what to look out for, what the early signs are and when it is advisable to seek medical advise. The popular French dish is made with puff pastry, and stuffed with a tasty filling of chicken and mushrooms. Chicken vol au vent originated around the 19th century, and was common as a amuse bouche, which are bite-sized items of food, had as an appetiser. Chef Jill Okkers, Culinary Director at Tashas Group, who also manages tashas cafe, has shared an easy-to-make dish with Connector, that only takes 20 minutes to prepare, and is sure to be a regular appetiser to make, when in a pinch. Recipe: 1. Preheat the oven to 180ºC. If the puff pastry casings are frozen, place them spaced apart on a baking tray, and bake till they puff up and turn golden brown. Remove from the oven and let them cool to room temperature. If the puff pastry casings are already baked, pop them in right before serving, to refresh them. 2. Place a large thick base saucepan on medium heat. Once the pan is hot, add half the olive oil, followed by half the mushrooms. Sauté the mushrooms until they are slightly caramelised and become tender. Remove and repeat with the remaining mushrooms. Once done, remove the mushrooms from the pan. Ingredients: 8 To 10 Store-Bought Puff Pastry Casings 800g Chicken Breast 400g Button Mushrooms, Cut Into Four Quarters 30g Chopped Spring Onion 4 Cups Cooking Cream 1/2 Cup Chicken Stock 2 Teaspoons Chopped Fresh Thyme 3 Tablespoons Extra Virgin Olive Oil 100g Salted Butter Salt And Pepper To Season 3 Teaspoons Of Chopped Chives 3. Cut the chicken into 2cm cubes and add to the pan. Sauté until the chicken is seared evenly, and golden in colour. 4. Add the spring onion and thyme to the pan with the chicken, and combine for two minutes. Deglaze the chicken using the chicken stock, by adding it in bits at a time. Cook until half of the stock has evaporated. 5. Add in the butter and season lightly with salt and pepper. 6. Pour in the cream and bring the mixture to a simmer. Allow it to reduce to just over half, and add the mushrooms. 7. Give the filling a final taste, and season more if needed. 8. To serve place the puff pastry casings on a dinner plate, press the centre of the pastry down, and spoon in the filling. 9. Garnish with chopped chives.

As a chef, the kitchen demands relentless effort and dedication each day, but tasting the fruits of your labour and seeing guests enjoying your creations makes it worth it. What is your earliest cooking memory? When I was around five or six years old, I received my first cooking book as a present. After reading that book, I can still clearly remember how obsessed I became with making the perfect omelette, a smooth skin, slightly runny interior, rolled in with the stuffing inside. I think I made my entire family eat omelette every day for weeks, until I perfected it. What is your favourite dish from your country? As I was born and raised in Spain, it is no surprise that my favourite Spanish dish is Tortilla de Patata, also known as a Spanish omelette. When cooked the right way with high-quality ingredients, this is without a doubt my favourite dish and it reminds me of home. I could eat this for breakfast, lunch and dinner, either warm, straight out of the pan or leftover cold from the fridge. What is the one go-to and easy snack you love making for midnight cravings? I lived and worked in Asia for quite a few years including Taiwan, China, Malaysia and Hong Kong, and my favourite comfort food is Asian. My favourite quick fix for a midnight craving is a bowl of sesame noodles, which can be prepared in under five minutes. I usually cook a classic one but add a good drizzle of crispy chilli oil and Sichuan pepper oil, which gives it a nice kick. My other go-to snack is Korean instant noodles, available at almost any grocery store in Dubai. I like to spruce mine up by adding an egg, a couple of slices of cheddar cheese, chopped spring onions and a side of ripe kimchi. What is the one raw ingredient you cannot cook without from your country? Spanish saffron from Spain’s La Mancha region. My father’s family comes from there and many of the dishes my grandmother used to cook for us had saffron. For me, it is the best in the world. Besides that, I would say that extra virgin olive oil is probably the most indispensable ingredient for cooking, not only in Spanish food but in a variety of cuisines. It can not only be used for cooking but can be used to finish cooked dishes and dress up raw ingredients. What is the best dish to try at your restaurant? As I oversee JW Marriott Marquis Dubai’s whole portfolio of restaurants, it is difficult to choose just one because each outlet has its own unique offering with an array of amazing dishes.
