Have a Festive Breakfast

As the leaves begin to fall and the temperature begins to drop, autumn brings with it the signature tastes of pumpkin mixed with holiday spices like cinnamon and nutmeg. Halloween may be over, but with Thanksgiving right around the corner, I have always loved the flavours of this time of year particularly for breakfast. Try this easy recipe for pumpkin pancakes to get your kitchen (and the rest of your house) smelling like the festive season.

Pumpkin Pancakes

Ingredients:
1 cup pumpkin puree
2 eggs
4 tbsp melted unsalted butter
1/4 cup granulated white sugar
1/3 cup milk
1 1/3 cups all-purpose flour
1/2 tsp baking soda
3 tsp baking powder
1 tbsp cinnamon
1 tbsp nutmeg
½ tsp vanilla extract

Preparation Method:

Mix all the wet ingredients until well combined. Whisk all the dry ingredients together before mixing with the wet mixture. Generously oil your pan before putting in the batter to avoid it from sticking. Serve with syrup, honey, or chocolate sauce and while you’re at it, why not add a little whip cream?
