Healthy salmon

Despite being labelled as 'fatty fish', salmon is actually low in calories and saturated fat, and has recently been evaluated as having a superior fat composition because of its rich omega-3 content. Salmon is considered an excellent source of omega-3 fatty acids, Vitamin D and selenium. It is also a very good source of protein, niacin and Vitamin B12 and a good source of phosphorus, magnesium and Vitamin B6. All these features lead to a reduced risk of inflammation and help maintain the integrity of the immune and circulatory systems.

Hearty Salmon Fillet

Ingredients:
1/3 cup apple jelly
1 tablespoon finely chopped fresh chives
2 tablespoons prepared horseradish
1 tablespoon Champagne vinegar
1/2 teaspoon salt, divided
4 (170 g) salmon fillets (about 2.5 cm thick), skinned
1/4 teaspoon freshly ground black pepper
2 teaspoons olive oil

Directions:
Preheat oven to 350°. Combine apple jelly, chives, horseradish, vinegar, and ¼ teaspoon salt, stirring well with a whisk. Sprinkle salmon with ¼ teaspoon salt and pepper. Heat oil in a large nonstick skillet over medium heat. Add salmon, and cook for 3 minutes. Turn salmon over and brush with half of apple mixture. Put skillet in oven and bake at 350° for 5 minutes or until fish flakes easily when tested with a fork. Brush with remaining apple mixture.
