Natural Nutrition: Sweet Potato Boats

Snacking… don’t we all love snacking? This is one of the questions most clients ask me about. They need inspiration for healthy but easy to prep snack options. So I’ll share some of my favourites, my go-to snacks that you can usually find already prepared in my fridge or freezer. These snacks are my favourite because they are high in protein and or a good source of complex carbohydrates, fibre and fairly low in sugars. They are great if you fancy a little something in the afternoon or want something healthy to take with you to the office. Sweet potato boats

Ingredients
1 medium sweet potato
 
Toppings:
Hummus
Nut butter
Organic quark (Greek yoghurt)
Cashew cream
Raw chocolate sauce
Banana slices
Berries
Cinnamon
Cold cuts like chicken or turkey
Herbs
lettuce
…or whatever spreads and toppings you like.

Directions
Simply wash the sweet potato and cut it into 5mm thick slices. Stick the slices into the toaster and allow to grill until golden brown. This should take no longer then 2-3 minutes.
Once they are done add your favourite spreads and toppings. This is a perfect snack for anyone who tries to cut out bread or wheat products. They go nicely with eggs in the morning or any other side options to any other dish. I even take them with me to work and enjoy eating them cold.
