Natural Nutrition: Dragon Fruit Sorbet/ Ice Cream

It’s finally that time of the year, the summer and holiday season is here! BBQs and relaxing afternoons by the pool, or lake if you are lucky enough to enjoy cooler summer weather outside the UAE. I am lucky enough to enjoy the weather in Germany at the moment and my days have been filled with sunny afternoons by the pool with my little niece and nephews. Of course those sweet little monsters are craving ice cream and popsicles nonstop. So instead of giving them sugar laden unhealthy store bought popsicles, I decided to make my own. As always, they are refined sugar free, dairy free and made from only natural ingredients. I have been trying a few different recipes but today, I am sharing the recipes that were mostly liked, not only by the kids. At my birthday BBQ, all my popsicles were gone in no time and it was the big kids (so called adults) that were asking for more! Serves: 2-3 people

Ingredients:

2 ripe dragon fruits
½ cup frozen raspberries
2 tbsp rice malt syrup
½ cup almond milk
Fresh juice of 2-4 limes
Handful crushed ice

Directions:
Cut the dragon fruit in half and carefully scrape out the flesh. Save the outside as a serving bowl for beautiful eye catching presentation.
In a high speed blender, blend all the ingredients until you have a smooth ice-cream like consistency. Should your texture be too thick, simply add a splash more of your almond milk. Blend again until you have your desired consistency.
I served my ice-cream in the empty dragon fruit bowls. Put some fresh mint leafs on top and voila you got yourself a super yummy and healthy summer treat. Enjoy!
