3 DIY Healthy Summer Eats to Keep You Cool

Summer! It is that time of the year to go have fun at the pool or a torturous walk under the blazing sun. It’s amazing how much the heat can drain us of our energy. Sometimes, it can get so hot, that all we want to do is lie down and do nothing, not even eat, but not today. Here are some easy and healthy recipes to fall in love with this summer and enjoy time and time again!

Grilled Cilantro-Lime Chicken with Avocado Salsa

So fresh and so hearty! Enjoy this twist of marinated grilled chicken topped off with a smooth zesty salsa.

Here are the ingredients:

The Chicken

  • 4 chicken breast halves (boneless and skinless)
  • 1 tbsp of lime zest
  • 1/3 of a cup of fresh lime juice
  • 1/3 of a cup of chopped cilantro
  • ¼ of a cup of olive oil
  • ½ tsp of honey
  • 3 minced cloves of garlic

The Salsa

  • ½ of a medium sized avocado, diced
  • 2 medium chopped tomatoes
  • ½ cup of chopped red onion
  • 1 tsp of fresh lime juice
  • 1 minced garlic clove

*Salt and Pepper to taste for everything

Procedure

  1. Place the chicken on a cutting board, cover it with a plastic wrap and pound it to an even thickness.
  2. In a smaller bowl, whisk together the lime juice and zest, honey, olive oil, garlic, cilantro and season with salt and pepper.
  3. Place the marinade mix and the chicken into a re-sealable plastic bag or container, and let it sit for 3 hours.
  4. Preheat the grill on medium heat and brush it with some oil.
  5. Grill the chicken for 4 minutes on each side, after which remove it and let it rest for 5 minutes.
  6. In a medium mixing bowl, combine together the avocado, onion, tomato, lime and garlic, then season with salt and pepper.
  7. Serve the chicken and salsa with a sprinkle of chopped cilantro and some lime wedges. Enjoy!

Berry Yogurt Bark

Take advantage of the summer berry season! With a handful of berries, some Greek yogurt and a freezer you can enjoy this frosty treat.

Here are the ingredients:

  • 32 oz. of plain Greek yogurt
  • 1 pint of raspberries and blueberries
  • ½ a cup of honey
  • 1 cup of strawberries

Procedure

  1. Line a 9x13-inch baking dish with parchment paper.
  2. In a bowl, whisk together the Greek yogurt and honey and pour the mixture into the base of the baking dish.
  3. Sprinkle the different berries and press them gently into the mixture.
  4. Place the dish into the freezer for 2 hours and once it’s frozen, use a knife to break it into pieces. Enjoy!

Coconut Water and Fresh Fruit Popsicles

Here is lighter frozen treat! Make your own icy popsicles with fresh fruit and coconut water.

Here are the ingredients:

  • Fresh fruit of your choice watermelons, mangoes, pineapples, oranges, berries etc. combine whatever you like
  • Coconut water

Procedure

  1. Chop up the fruits into smaller pieces and drop them into the Popsicle molds.
  2. Pour in the coconut water over the fruits until the mold is filled and insert the sticks.
  3. Cover and let them chill for several hours.
  4. Once frozen, take them out and let sit in room temperature of a couple of minutes then pop them out. Enjoy!
