Carrot Waffles For A Great Breakfast

Breakfast is the most important meal of the day and what better way to start the day than with waffles.

The recipe for carrot waffles is a great one for a quick and healthy alternative and can also be had as a snack anytime during the day.

Made by Chef Nilesh Darekar, Chef de Cuisine at Eat and Meat Restaurant at The H Hotel, this delicious recipe will definitely be your go-to for tasty waffles.

Ingredients:

  • 150g grated carrots
  • 2 eggs
  • 20g chives
  • 25g flour
  • 50g grated Gouda cheese
  • 30g avocado
  • 10g salt
  • 5g pepper
  • 5ml olive oil
  • 15g Frisse lettuce
  • 5g micro greens
  • 15g cherry tomatoes
  • 5ml lemon juice

Recipe:

  1. Preheat the waffle iron.
  2. In a large bowl, mix the carrots, beaten eggs, cheese, chives, flour, salt and pepper.
  3. Pour the mixture onto the waffle iron and cook till golden brown.
  4. Smash the avocado and add salt, pepper, olive oil and lemon juice to make the dip.
  5. Confit the cherry tomatoes in olive oil, salt and pepper on moderate heat.
  6. Make a salad with the lettuce and micro greens and use lemon juice, olive oil, salt and pepper to make the dressing.
