Mexican is one of my favourite cuisines. While authentic Mexican is traditionally healthy, I don’t think you need me to tell you that some modernised versions are certainly not waistline friendly, or healthy for that matter. However, you can easily make healthy Mexican food at home without compromising the taste. Look at my all-time favourite Lean Tacos, as I call them, or one of my favourite dishes ever - Ceviche, fresh fish cured with lime juice, tossed with cilantro, cucumber, and tomato, and avocado. What could be healthier or more delicious?

Ingredients:
3 medium ripe Hass avocados, halved and pitted (peel removed)
1 medium lime
1/2 tsp kosher salt
1/2 tsp ground cumin
1/4 tsp ground cayenne pepper
1/2 medium onion, diced
2 small Roma tomatoes, seeded and diced
1 large garlic clove, minced
1 tbsp fresh cilantro, chopped
1 tbsp jalapeno, minced
2 tbsp fresh pomegranate kennels
Directions:
Place the avocado pulp and lime juice in a large mixing bowl and toss to combine. Add the salt, cumin and cayenne and mash using a potato masher, leaving some larger chunks for texture. Add the onion, tomatoes, garlic, cilantro and jalapeno and stir to combine. Lay plastic wrap directly on the surface of the guacamole and allow to sit at room temperature for two hours before serving.
