When life gives you watermelons

Nothing takes me down a nostalgic trip of past summers like fresh juicy watermelon. Granted, it’s absolutely delicious on its own. Juiced or in chunks, you can count on the fact that it’ll be devoured in minutes. But why not get a little adventurous? Here are a few unique watermelon recipes that will have you wishing it was summer all year round.

Watermelon gazpacho

Ingredients
1 large watermelon, seeded and diced
1 red bell pepper, seeded and diced
1 green bell pepper, seeded and diced
1 pint cherry tomatoes, chopped
1 English cucumber, seeded and diced
2 green onions, finely chopped
1 tbs chopped cilantro
2 tsp of grated fresh ginger
½ jalapeno, seeded and finely diced
Salt and pepper to taste

Directions
Puree some of the seeded diced watermelon in your blender to make 6 cups. Place in a large bowl and combine all other ingredients. Salt and pepper to taste. Chill for 1 hour. You can skip this if all your ingredients were good and cold.

Watermelon smoothie

Ingredients
2½ cups fresh seedless watermelon, 
roughly chopped
½ heaping cup fresh or frozen pineapple, roughly chopped
½ ripe banana, roughly chopped
½ cup coconut water
2 tbsp Greek yogurt
2 tbsp lime juice

Directions
Put all the ingredients in a blender and blend until smooth. Serve chilled and with a slice of watermelon on the rim of the glass for a classy touch.

Watermelon chicken salad with pine nuts and feta cheese

Ingredients
4 ounces baby spring greens
1 cup watermelon
¼ cup pine nuts
¼ cup feta cheese
1 cup grilled chicken, chopped or shredded
3 tbsp lime juice
2 tbsp honey
2 tbsp olive oil
½ tsp minced garlic
3 large mint leaves, minced
Fresh cracked pepper

Directions
Place the greens in two salad bowls. Top each bowl equally with watermelon, pine nuts, feta cheese and grilled chicken. To make the vinaigrette, whisk together the lime juice, honey, olive oil, garlic, fresh black pepper and mint leaves. Drizzle over the salads and serve.

Watermelon yoghurt popsicles

Ingredients
3 cups cubed watermelon
? cup strawberry yoghurt
1 tbsp honey
1 tsp mini chocolate chips

Directions
Place the cubed watermelon, strawberry yoghurt, and honey into the blender. Blend everything together, until nice and smooth. Pour into popsicle moulds. If you wish to add the chocolate chips, don’t put the lids on the moulds. Place them in the freezer and allow them to become semi solid. Then, evenly distribute the chocolate chips. Stir up the mixture, put the handles in and allow to freeze until completely frozen.
