Cake Pop Characters

Ingredients:
1 packet of cake mix
1 cup icing sugar
100 grams cream cheese
375 grams white chocolate
A range of different food colouring gels

Method: Bake the cake following the instructions on the packet then break into small pieces and blend in a food processor to make crumbs. Mix the cream cheese, cake mix, and icing sugar then roll into balls. Place a stick into each ball and chill. Gently melt the white chocolate in a heat proof bowl over a lightly steaming pan of water, stirring continuously. Divide the white chocolate into different dishes and mix each one with a different colouring gel. Dip the cake balls into the gel then chill until set. Decorate with sprinkles and icing.


White Chocolate Mousse Bunny

Ingredients:
1 pint whipping cream
350 grams white chocolate

Method: Heat ½ cup of whipping cream in a pan until simmering. Gently melt the white chocolate in a heat proof bowl over a lightly steaming pan of water, stirring continuously. Mix the simmering cream with the melted chocolate and stir until smooth and evenly melted. Set aside to cool. Pour the remaining whipping cream into a blender and whisk until soft peaks start to form. Carefully add the cooled white chocolate mixture into the whipping cream. Chill until set. Decorate with sweets.


Chocolate Nest Cup Cakes

Ingredients:
1 packet chocolate cup cake mix
Paper cup cake cases
Icing
85 grams butter
1to 2 tablespoons milk
1 heaped tablespoon cocoa powder
225 grams icing sugar, sieved
100 grams mini chocolate eggs

Method: Make the cake mix, spoon the mixture into the paper cases and bake following the instructions on the packet. While the cakes cool, beat all your icing ingredients together in a mixing bowl until smooth. Pipe the mixture over each cake to form a little nest. Decorate with chocolate eggs.
