Natural Nutrition: Rainbow Ice Lollies

It’s finally that time of the year, the summer and holiday season is here! BBQs and relaxing afternoons by the pool, or lake if you are lucky enough to enjoy cooler summer weather outside the UAE. I am lucky enough to enjoy the weather in Germany at the moment and my days have been filled with sunny afternoons by the pool with my little niece and nephews. Of course those sweet little monsters are craving ice cream and popsicles nonstop. So instead of giving them sugar laden unhealthy store bought popsicles, I decided to make my own. As always, they are refined sugar free, dairy free and made from only natural ingredients. I have been trying a few different recipes but today, I am sharing the recipes that were mostly liked, not only by the kids. At my birthday BBQ, all my popsicles were gone in no time and it was the big kids (so called adults) that were asking for more! Serves: 6 molts (depending on size of molts)

Ingredients:

1 cup cherries, pitted
1 banana
1 cup mango
½ cup pineapple
2 kiwis, washed with peel on (yes, you can eat the peel too!)
Handful baby spinach
3-4 fresh mint leaves

Directions:

Red layer - add cherries and ½ banana into a high speed blender and pulse until roughly blended. Then distribute evenly among the ice pop molds. It should roughly be one - two tablespoons in each mold. Put into freezer and allow to freeze for minimum 30 minutes. This is important. If your layers are not hardened enough everything will blend into each other and you wont be able to see the different colors as rainbow layers.

Green layer - add kiwi, mint leafs, baby spinach and the other ½ banana into the blender. Blend until you have a smooth consistency. Before you distribute the green layer, make sure the red layer has hardened. Then again freeze for at least 30 minutes.

Yellow layer - blend pineapple and mango and divide evenly on top of the other layers. Freeze for at least 1 hour or until completely frozen.

Tip: if you don’t have popsicle forms, simply use silicon ice cube forms.
