Natural Nutrition: Vegan Cherry Nicecream

It’s finally that time of the year, the summer and holiday season is here! BBQs and relaxing afternoons by the pool, or lake if you are lucky enough to enjoy cooler summer weather outside the UAE. I am lucky enough to enjoy the weather in Germany at the moment and my days have been filled with sunny afternoons by the pool with my little niece and nephews. Of course those sweet little monsters are craving ice cream and popsicles nonstop. So instead of giving them sugar laden unhealthy store bought popsicles, I decided to make my own. As always, they are refined sugar free, dairy free and made from only natural ingredients. I have been trying a few different recipes but today, I am sharing the recipes that were mostly liked, not only by the kids. At my birthday BBQ, all my popsicles were gone in no time and it was the big kids (so called adults) that were asking for more! Serves: 2-3 people

Ingredients:

2 cups frozen pitted cherries
2 frozen bananas
1 tsp fresh lemon zest
1 tsp fresh lemon juice
1 cup rice milk

Directions:

Blend all the above ingredients in a high speed blender until you have a smooth ice-cream like consistency. Should your texture be too icy, simply add a little more rice milk and blend again until it becomes creamier.

Serve in a bowl and optionally decorate with fresh banana slices, chocolate sauce, dark chocolate flakes and fresh cherries. Enjoy immediately.
